Sea Lettuce (Ulva spp.) is one of the ocean's most vibrant and versatile edible seaweeds, hand-harvested from the clean, cold waters of Ireland's wild Atlantic west coast. Its vivid emerald-green fronds and fresh, mildly briny flavour make it a wonderful introduction to cooking with seaweed.

With a delicate taste that's lightly salty and subtly oceanic, Sea Lettuce works beautifully raw in salads and slaws, crumbled over soups and risottos, or lightly toasted and used as a seasoning. It rehydrates quickly, making it one of the most kitchen-friendly seaweeds you'll find.

Nutritionally, Sea Lettuce punches well above its weight:

  • Exceptionally high in iron — one of the richest plant-based sources available
  • Good source of protein, vitamin C, and B vitamins
  • Rich in antioxidants and chlorophyll

Preparation: Rinse briefly in cold water and soak for 5–10 minutes to rehydrate. Use as you would fresh salad leaves, or simmer gently in broths and stews. Toast in a dry pan for a crispy, umami-rich garnish.
