Irish Moss / Carrageen (Chondrus crispus)
Irish Moss (Chondrus crispus), known locally as Carrageen, is a beloved red seaweed with deep roots in Irish coastal tradition. Hand-harvested from the wild Atlantic shores of Ireland's west coast, this fan-shaped, purple-green seaweed has been used in Irish kitchens and home remedies for generations — and for very good reason.
Mild and almost neutral in flavour, Irish Moss is prized above all for its remarkable gelling properties. When simmered in liquid, it releases natural carrageenan that thickens and sets beautifully, making it an ideal plant-based alternative to gelatine. Use it to make traditional Irish Moss pudding, blancmange, panna cotta-style desserts, smoothies, and dairy-free milks. It also works wonderfully as a thickener in soups and sauces.

Preparation: Rinse thoroughly in cold water, then soak for 15–20 minutes until softened. To make a gel, simmer in water or milk for 20–30 minutes, strain, and allow to set. Add the gel to smoothies, desserts, or sauces for a natural, creamy texture.
Storage: Store in a cool, dry place away from direct sunlight. Once opened, keep in an airtight container and use within 4–6 weeks for best results.
